What is a Pintxo de Tortilla?
Tortilla de Patatas is a traditional Spanish dish similar to the standard omelette but with fried potatoes and normally caramelised onion in it. If you never tried it, it's definitely a must if you come to Northern Spain.
A Pintxo de Tortilla is a slice of tortilla, served with a slice of bread.

My favourite type
In my opinion, the best tortilla is the one that is not cooked enough for the mixture to become fully solid, but not undercooked enough for it to be liquid. And there's a restaurant that absolutely nails this sweet spot:
